This pasta is delicious, fresh and really simple to make!
300g Fresh Parpardelle (I use Bertagni)
2 cooked and shredded chicken breasts
3 Tbsp capers
3 Tbsp olive oil
2 Cloves minced garlic
1 small thinly sliced red onion
1 Tbsp lemon zest
Juice of a lemon
1/2 cup fresh sliced basil (few extra leaves for garnish)
1 cup freshly grated parmesan
Fresh chilli (optional)
Salt and pepper to taste
Place the pasta in a large saucepan of lightly salted boiling water, cook until al dente. (Fresh pasta should only take about 3mins)
In another pan add olive oil, red onion, capers, garlic, chicken, lemon zest and juice gently warm.
Add drained pasta to the warmed chicken mix, then stir in fresh basil and parmesan(leaving a little for garnish).
Salt and pepper to taste.
To serve, place in a large bowl and top with extra parmesan, fresh basil leaves, a wedge of lemon and the option of fresh chilli.
