Delicious little skewers perfect nibbles or on the summer bbq. I’m always getting asked to make these for friends and family
400g Chicken breast cut into cubes
200g Halloumi cut into cubes the same size as chicken
1/2 teaspoon chilli flakes (optional)
1/4 cup of lemon juice
2 cloves garlic
zest of a lemon
3 Tablespoons of olive oil
2 Tablespoons of fresh oregano
Place all ingredients into a large bowl mix gently. Then cover and place in the fridge for an hour. Thread the chicken and halloumi onto skewers. Cook on each side for 3mins on a med/high heat with a Tablespoon of oil or on the bbq until chicken is cooked through and halloumi is golden brown.
Serve hot with lemon wedges.
